Fajita-less Fajitas

Description

A deconstructed version of fajitas, suitable for various dietary needs, including gluten-free options.

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Chop the peppers into strips.
  3. Place the pepper strips on a baking sheet, drizzle with oil, and sprinkle with fajitas spice.
  4. Put the peppers in the oven and cook for 35-40 minutes, checking often to prevent burning.
  5. After about 15-20 minutes, prepare the chicken:
    • Place defrosted chicken thigh fillets in a Pyrex casserole lid or cake tin.
    • Cook in the oven at 180°C (350°F) for about 20 minutes.
  6. Prepare the halloumi:
    • Slice the halloumi.
    • Either put it in the oven for about 15 minutes, or
    • Fry in a large frying pan with a bit of oil for about 5-6 minutes.
  7. Warm the gluten-free tortillas in the microwave to make them soft.
  8. Grate the cheese if not already grated.
  9. Once everything is cooked, serve all components separately for people to assemble their own fajitas.
