Fajita-less Fajitas
Description
A deconstructed version of fajitas, suitable for various dietary needs, including gluten-free options.
Ingredients
- 6 peppers
- Chicken thigh fillets (defrosted)
- Fajitas spice
- Halloumi
- Sour cream
- Cheese ("Tim cheese")
- Gluten-free tortillas (about 8-9 for two people plus a small portion)
- Oil

- Baking sheet or tray
- Pyrex casserole lid or cake tin (for chicken)
- Large frying pan (optional, for halloumi)
- Grater (for cheese)
- Serving plates and utensils
Preparation Time

Instructions
- Preheat the oven to 200°C (400°F).
- Chop the peppers into strips.
- Place the pepper strips on a baking sheet, drizzle with oil, and sprinkle with fajitas spice.
- Put the peppers in the oven and cook for 35-40 minutes, checking often to prevent burning.
- After about 15-20 minutes, prepare the chicken:
- Place defrosted chicken thigh fillets in a Pyrex casserole lid or cake tin.
- Cook in the oven at 180°C (350°F) for about 20 minutes.
- Prepare the halloumi:
- Slice the halloumi.
- Either put it in the oven for about 15 minutes, or
- Fry in a large frying pan with a bit of oil for about 5-6 minutes.
- Warm the gluten-free tortillas in the microwave to make them soft.
- Grate the cheese if not already grated.
- Once everything is cooked, serve all components separately for people to assemble their own fajitas.
Notes
- It may be easier to plate up in the kitchen due to the number of pans and components.
- Adjust cooking times if needed, especially if using a different oven temperature for multiple components.
- The recipe is gluten-free when using gluten-free tortillas.
